OVEN FRIES

A simple and economical way to makes some of the best tasting potato fries your mouth has ever tasted.

Oven Fries
Prep. Time: 10 Min
Cook Time: 30-35 Min
Difficulty: Easy
Serves 4

Ingredient List
2 Russet Potatoes (cut in half lengthwise
to make 16 big fat wedges)

1/4 Cup of Extra Virgin Olive Oil
3/4 Teaspoon Kosher Salt
1/4 Cup Freshly Grated Parmesan
2 Tablespoons Flat Leaf Parsley (chopped)

Step by Step Prep.
1.  Preheat your oven to 425 degrees.
2.  Toss your cut potatoes with the olive oil and salt in a large mixing bowl, then transfer your potatoes onto a large baking sheet, making sure to spread out in a single layer.  This will ensure crispness.
3.  Roast your potatoes for 30-35 minutes, or until they are cooked through, brown and crisp to your liking.
4.  Toss them again in a large bowl with your cheese and parsley and serve hot!

ROASTED BROCCOLI WITH CRISPY PARMESAN AND LEMON

Finding new and interested ways to get my family to eat vegetables has always been a challenge.  I for one love all vegetables but such is not the case for everyone.  Here is yet another recipe that i found, that my family loves.

Roasted Broccoli
Prep. Time: 5 minutes
Cook Time: 15 minutes.
Difficulty: Easy

Ingredient List
Kosher Salt
2 Full Heads of Broccoli
1 Cup of Freshly Grated Parmesan
Juice of 1 Lemon

Step by Step Prep.
1.  Preheat your oven to 400 degrees and bring a big pot of salted water to a boil.
2.  Trim your broccoli to your liking and cut into spears
3.  Once your water is boiling, add your broccoli and boil for about 4 minutes, just until its tender but still bright green.
4.  Drain in your favorite colander.
5.  Now arrainge your broccoli in a non stick oven proof pan, and sprinkle the cheese evenly over the top and bake until the cheese melts and forms a crispy layer over your broccoli, this usually takes about 10 minutes.
6.  Before serving, squeeze your lemon over the broccoli and serve hot.  Its wonderful!

ASPARAGUS

Simple technique that for some reason makes asparagus taste so delicious you will forget you hated it as a kid!

ASPARAGUS
(Steamed in a Paper Bag)
Prep. Time: 10 min.
Cook Time: 20 min.
Difficulty: Easy

Ingredient List

1 Pound of Asparagus (ends trimmed)
Extra Virgin Olive Oil
Sea Salt, Cracked Black Pepper
1/2 Lemon (sliced very thin)
1 Bay Leaf

Step by Step Prep.
1.  Preheat your oven to 350 degrees, making sure that your oven rack is in the middle of the oven
2.  Get a paper bag (the ones you used for lunches in the 8th grade) large enough to hold the asparagus.  Drizzle the outside of the paper bag with olive oil to prevent the bag from burning.
3.  Season your asparagus with sea salt and cracked black pepper to taste, as well as add your lemon slices and bay leaf to the bag.
4.  Close the paper bag, folding it over several times to really hold in the steam.
5.  Place you bag filled with asparagus on a baking sheet, drizzle with more olive oil, and bake it in the oven for 20 minutes.
6.  Remove and transfer your asparagus to any serving dish you like, being careful cause it will be hot, be careful not to get burned by the steam.

SPINACH SALAD

THE ULTIMATE SPINACH SALAD
Prep. Time: 10 min.
Cook Time: 15 min (hard boiled eggs, bacon)
Difficulty: Easy

Ingredient List

2 Large Eggs
2 Bacon Slices (cooked, chopped roughly)
1 Onion (sliced)
2 Whole Garlic Cloves
2 Tbsp. of Honey
1 Tbsp. of Apple Cider Vinegar
1 Bag of Baby Spinach
Salt and Fresh Ground Pepper

Step by Step Prep.

1.  Boil the eggs for around 6 minutes (for large eggs), peel set aside.
2.  Cook your bacon in a large skillet, rendering the fat in the pan.  Take your bacon out and place on paper towel to soak up some of the grease.
3.  Now in your bacon fat add the onion and garlic, and cook until soft, add you honey and apple cider vinegar and keep cooking the onion until it has caramelized, usually takes about 5 minutes.  
4.  Toss your spinach into the pan, season with salt and pepper to taste and toss with thongs just until the spinach begins to slightly wilt (keep on eye on it cause it goes quick, and will turn to mush). 
5.  Dump the spinach out into a bowl and add the bacon and sliced eggs atop your salad arranged however you prefer.
6.  Serve immediately.

CRAB SALAD

SPICY CRAB SALAD
Prep. Time: 15 min.
Cook Time: 0
Difficulty: Easy

Ingredient List

1 Pint of Lump Crab Meat
1/4 Cup of Mayo
1 Tbsp. of Hot Chile Paste
2 Tbsp. Chopped Fresh Cilantro
1 Lime
Salt and Ground Pepper
2 Large Avocados
4 Fresh Mint Sprigs (optional)
Lime Wedges (for garnishment) 

Step by Step Prep.
1.  In a medium size mixing bowl, stir your mayo and crabmeat, chile paste, cilantro, and 1/2 juice of a lime.  Season with salt and pepper to taste.

2.  Slice your avocados in half and take out the pits or "stones". 

3.  Stuff each half of avocado with a big spoonful of the crab mixture.

4.  Garnish with Mint and Lime wedges and serve immediately.

CHICKEN WINGS WITH CURRY LIME BUTTER

Chicken Wings With Curry Lime Butter
Prep. Time: 15 min.
Cook Time: 25-30 min.
Difficulty: Easy

Ingredient List


4 Pounds of Whole Chicken Wings (frozen are fine)
Extra Virgin Olive Oil
Salt
Fresh Ground Pepper
1 Stick of Unsalted Butter (Soft)
2 Teaspoons of Curry Paste
1 Lime
1 Tablespoon of Honey
Soy Sauce
Cilantro for Garnish (optional)

Step by Step Prep.
1.  Preheat your oven to a temperature of 425 degrees
2.  Rinse your wings under cold water, and pat dry with a paper towel.
3.  In a large mixing bowl add your wings, then drizzle with olive oil and toss to make sure wings are coated.
4.  Season with your salt and pepper and once again toss making sure that each wing is coated well
5.  On a large baking sheet, spread your wings out evenly, and bake for 25-35 minutes or until your skin is nice and brown and crispy.
6.  While your wings are baking grab your food processor and add your curry paste, butter, lime juice(1 whole lime), and a dash of soy sauce and mix.  Season with salt to taste and mix again.  
7.  When your wings are done baking, throw them into a bowl with your butter mix and toss well again making sure each wing is coated.  
8.  Garnish with cilantro and serve!
 

BANANA DAIQUIRI

BANANA DAIQUIRI
Prep Time: 5 Min.
Difficulty: Easy

Ingredient List

Your Favorite White Rum

3 Tbsp. Creme De Banane

2 Limes

2 Bananas (peeled and mashed)

24 Ice Cubes

Step by Step Prep.

1.  Mix together all the ingredients.  Shake them in a cocktail shaker until the ice cubes have melted.
2.  Strain the liqueur into cocktail glasses and serve with a straw.
