GUACAMOLE STUFFED TOMATOES

Tomatoes along with avocados originate from Mexico. Tomates Rellenos de Guacamole or Guacamole Stuffed Tomatoes are another simple traditional Mexican dish. Simple and delicious, perfect as a appetizer or as a light lunch.

Tomates Rellenos de Guacamole

Ingredient List

6 Large Tomatoes (skinned)

Salt

2 Large Avocados (peeled and stoned)

1/2 Onion Chopped

2 Serrano Chillies De-seeded and Chopped

1 Tbsp of Coriander
(fresh works best but dried will do)

Juice of 1/2 Lime

Extra Coriander Leaves for Garnishing
(optional)

Step by Step Prep.

1. Cut the tops off the tomatoes and carefully scoop out the insides leaving the sides fairly thick. Save the tops of the tomatoes for a later garnish.

2. Sprinkle the insides with a course salt and turn upside down to drain for 15 minutes or so.

3. Crush and mash the avocados in a bowl and add the onion, chillies, chopped coriander and lime juice. You may add salt to taste at this point.

4. Using a spoon, scoop the guacamole into the tomatoes, then garnish with the coriander leaves and pieces of tomato. Be sure to serve immediately.
