Ingredient List
Four 24 oz. bone-in-rib eye steaks
(try not to substitute as these cuts are best)
3 Tablespoons of Sea Salt
(use more if using Kosher salt)
Garam Marsala
(or mix together equal parts ground allspice, cinnamon, nutmeg, and cloves)
1 Tbsp Freshly Ground Black Pepper
3-6 Tbsp of Extra Virgin Olive Oil

Step by Step Prep.
1. Heat up your grill. If you are using a gas grill heat it to its highest setting, if using charcoal wait until all the coal has turned to a white ash. You can also use your broiler if you wish, but doesn't have quite the same results.
2. Combine your salt, spices, and fresh ground pepper, and mix them well. Brush your steaks with olive oil. Sprinkle half of the spice mixture onto one side of the steaks.
3. Brush your grill with olive oil and put the steaks season side down on the grill. Cook for about 4 minutes or until a dark brown crust forms. Season the other side of the steak with the remaining spice mixture for an additional 4-5 min. for medium rare. Remember to let steaks rest a few minutes before serving.
