STUFFED AVOCADO

Before I get to the recipe, a quick note about Avocados. Avocados are best purchased while they are still hard and unripe.  If you purchase when they are already soft they are usually to far gone and don't have the best taste.  For best results purchase your avocados ahead of time and let them ripen at home.

Ingredient List

4-5 Large Ripe Avacados
1 Lime

1 Small Can of Sardines (in olive oil)

Black Pepper

1 Tbsp. of Fresh Coriander (chopped)

2 Tbsp. of White Wine Vinegar

3-4 Hard Boiled Eggs (shelled, halved and chopped)

Feta Cheese

1 Lombok Chilli (sliced into rings)

Step by Step Prep.

1.  Peel and halve the avocados and remove the seeds.  Squeeze the lime over the halves, and set aside.
2.  In a small bowl mash the sardines and oil together.  Season with salt, pepper, coriander, and a bit of vinegar.  Add the eggs and mix well with a large spatcula or your hands trying not to break apart the eggs to much... you don't want mush.

3.  Spoon the mixture into the halves of avacado, dividing it evenly.

4.  Sprinkle with the crumbled feta cheese and chilli rings, serve immediately.
